TAVERN PILAF
Peel and wash the onions and dice finely. Wash the tomatoes and dice them after removing the skin. Cook the meat in a pan with 1/2 cup of water. After the water is absorbed, add the onions and oil. Continue to cook until the onions become yellow. Add the diced tomatoes or a tablespoon of tomato paste. Add two cups of boiling water and cook until the meat is tender. If there is not enough water, add twice as much water as Coarse Bulgur and bring to the boil. Add the Coarse Bulgur and salt and cook at medium heat. Turn the heat down to let it simmer. After the water has been absorbed, cover the pan with a paper towel and let it rest for 15 to 20 minutes. Serve adding black pepper.
